We always keep in mind to display the cuisine and cultural heritage of the former Monarchy through modern thoughts and elevate them to an elegant level. Our menu changes seasonally from month to month, following the season of the best ingredients.

We build the menu on the best quality ingredients available. These determined the evolution of the menu. We added some Hungarian specialties based on the personal experiences of our founder and the gastronomic history of the country.

THE MICHELIN STAR

On March 27, 2019, we received the news that we had become a Michelin-starred restaurant! Incredibly hard work and perseverance symbolize this result for which we worked for 11 years.

The restaurant has been in operation since 2008, with minor interruptions because of events in the world, but we have always been renewed and pushed to keep going and to achieve.

To use the words of our founder Hubert, "To fail is not an option!”.

In 2017, Decanter magazine chose Babel Budapest as the best international restaurant, evaluating our bold and unique wine-pairing concept based on food and the balance that exists exclusively with white wines and champagnes.

The principles of balance-based pairing were developed by our Executive Head Sommelier Péter Blazsovszky over the years, in close cooperation with the Chefs. Even today, the same principle applies to our Hungarian wine pairing.

THE BABEL FAMILY

The Babel team is a family. We therefore believe in the importance of human quality in the selection of team members, in addition to hospitality and professional knowledge.

We decided that we want to be the best workplace for our team, where professional development is as important as quality time outside of work and to have time to recharge is a possibility for everyone.

That’s why we’ve introduced revolutionary changes in the world of fine dining to achieve our goals. We work normal number of hours and have free mornings or nights and a whole weekend. We don’t have exploitative and burn-out shifts in our restaurant.

In return, we expect the maximum from our team during their shifts and when they create for our guests…

It is possible to study or study abroad and go on paid leave… It is possible to live a full life by overcoming the usual professional disadvantages and so creating sustainable working conditions in a livable way, where we can work together for a long time and work in this profession even at an old age.

HISTORY AND ART

Babel Budapest was founded in 2008 by Hubert Hlatky-Schlichter who is still the owner and leader of the restaurant. In 2015, Babel Budapest moved to its current location, the historic square of Budapest, on March 15 Square, next to the oldest church in the city center, in the building of the Piarist High School. Next to Babel you can find the iconic KIOSK Budapest restaurant, which can be seen through the wine fridge inside Babel. This move made it possible for us to adopt one of the largest and most equipped kitchens in Budapest.

Within the walls, which have been preserved in their original condition and show the traces of the great floods of Pest in 1838 you can find an atmosphere that is timelessly elegant but relaxed. It is considered by many to be the most beautiful restaurant in the country.

Preserving and creating traditions, returning to nature, recalling memories, and relocating them to our world today are all evident in the kitchen and in the guest room.

Hungarian artists took part in the realization of Babel Budapest. The letter B of Babel at the entrance is the work of the world-famous Samuel Havadtoy, in which the artist’s unique lace-making technique is recalled.

The unique ceramic set was created by Russian-Hungarian ceramic artist, Ksenia Wallenstein in a close collaboration with Daniel and Hubert, specifically designed for the current menu. In the restaurant, we place special emphasis on supporting and showing Hungarian values. The crystals used in the restaurant were made individually in the Ajka Crystal manufactory.
