“Sometimes we need to stop. To reflect on where we’re headed, what we’re doing, and why. Often it’s unsettling — because it forces us to face ourselves — but that’s exactly why it matters.

Every day, we work to build something that aligns with our values. Something that is not only good for us, but for our environment, our guests, and the generations to come. If that’s not commitment — then what is?

And now, if I pause and look at the steps we’ve taken… I believe we’re on the right path. We’re not just talking about sustainability — we’ve brought it to life.

This is real!

The farm has started. We’re already using its produce in the kitchen, and more and more is coming. We’ve reached a point where we can plan the next season based on our own needs, with produce we grow ourselves. That’s a huge step!

We’re not only dreaming up rare and special ingredients — we’re also bringing back the ‘ordinary’ ones whose true flavors we’ve almost forgotten. A proper green pea. A real potato. The taste of something seasonal, fresh, and honest. Now, we have these again. Because we made it happen.

I’m proud that we’re already talking about what we should plant next year — so that our menu can be real: clean, seasonal, local, and full of flavor.

I’ve never thought so far ahead professionally. They say I’m a visionary — and maybe, for the first time, I actually feel like one. But I’ve also never felt more grounded. This is freedom. This is responsibility.

And this is an enormous, shared effort. And in this effort, my deepest thanks go to our colleagues who care for the farm every single day. They tend the fields with care every single day, and they bring to life the idea from which these ingredients — quite literally — now flow into our kitchen.

If anything is sustainability — this is it.”
